The hardest part for me during my healthful journey was finding tasty meals that would resemble some of my favourites such as spaghetti, burgers, burritos, tacos, and wraps (yum!).
Those hearty and flavourful meals always had me excited for dinner because they were filling, tasty, and easy-to-make. Although delicious, my digestive system did not agree. I would painfully regret eating those meals night after night and would suffer for days to come.
Because I couldn't find many alternative recipes, I started experimenting in the kitchen and I was able to create some of the most delicious, nutritious, and easy-to-make meals that resembled all of my favourites!
For this Mediterranean Chard Wrap, I wanted a filling wrap that was loaded with nutrients, had plenty of good fat to keep me full, and would give me the same feeling as a wrap from my local sandwich store.
I know how important it is for us busy women to have healthy meals at our freshly painted fingertips, which is why I love this recipe! It’s so incredibly easy to make. I’m able to whip it together within minutes during my lunch break and still have plenty of time to read and relax before heading back to the office.
Mediterranean Chard Wrap
- 1 Large chard leaf
- 1/4 cup cooked quinoa
- 1/3 cucumber, finely chopped
- 1/3 red capsicum, finely chopped
- ¼ cup garbanzo beans
- 1 tspn red onion
- Cook quinoa
- Finely chop all ingredients
- Wash and dry chard wrap
- Spread a generous amount of hummus on the chard leaf
- Top with quinoa and other ingredients
- Wrap chard tightly (Wrap chard as a tight wrap or like a taco)
Bonus tip! Pre-cut and cook all ingredients on a Sunday evening so that during lunch you can easily put together your Mediterranean Chard Wrap.
