Last weekend I had some free time on my hands which was great and no joke I did SO much cooking! I felt so productive and tired afterwards, let me tell you! But one thing I did end up making which I just HAD to share with you guys was this homemade granola with cinnamon poached pears. The granola is super easy, all you have to do is mix up the ingredients and bake for a little while and the pears are such a great way to make your breakfast a little more special.
1 cup desiccated coconut
200 grams oats
100 grams crushed almonds (or whole – your choice!)
50 grams crushed walnuts (again your choice, you can have them whole as well)
50 grams sunflower seeds
2 tablespoons chia seeds
3 tablespoons apple sauce (try for unsweetened or at least organic)
2 tablespoons cocoa (or raw cacao)
½ cup goji berries
¾ cup sultanas
Mix it all up then lay it on a baking tray and pop in the oven for 30 minutes on 120 degrees Celsius/roughly 250 degrees Fahrenheit
1 pear, quartered and cored
1 tablespoon honey
2 teaspoons lemon juice
¾ cup water
Bring to the boil then let simmer for 15 minutes or until the pear is tender.
I added homemade yoghurt to my granola and poached pears and damn, did it taste good!
