I'm such a fan of throwing beautiful fresh ingredients together to create a tasty, healthy dinner option. Especially in the middle of a hot Sydney summer (and then Indian summer!) anything that doesn't require baking is a winner in my books. This salad is exceptionally simple but tastes deliciously lush and is almost like a treat! Layer some lettuce on the bottom of your plate, then cover with chopped cherry tomatoes (or mini Roma’s as I did here), crumbled goat’s cheese, rolled prosciutto and chopped figs. Drizzle a balsamic dressing (or fresh lemon juice) over the top and you’re good to go!
