Who doesn't love the unique flavours of black beans and corn mixed together? Well, have you ever made it into a salad with a side of “fiesta”!? With these freshly chopped ripe vegetables, this salad will knock your socks off, literally!
Summer is upon us which means fresh vegetables equal glorious finds at the market. We tend to eat a little bit lighter when it’s hot and humid outside, so this salad is the perfect go-to with a perfect amount of fiesta! The combination of vegetables and fresh herbs not only makes it a great salsa for dipping, but also makes a delicious salad served over brown rice!
As I started to put all of the ingredients together, I decided to add a kick to it by adding a pinch of Sriracha! If using the powder, you only need a pinch or else it will overpower the salad. A dash of cayenne pepper will also do the trick.
By adding the brown rice, you get a great combination of fresh vegetables and herbs with complex carbohydrates which aid in digestion. Plus the fresh flavours, packed full of spice will leave you grabbing for seconds!
Here’s what you'll need:
Fiesta Black Bean & Corn Salad over Brown Rice
- 2 tomatoes, chopped
- 1 avocado, small chunks for mashing
- 1 cup corn (roasted or grilled), chopped
- 1 pint black beans, drained
- 1 cup cucumber, chopped
- 1/2 cup basil, finely chopped
- 1/2 cup cilantro, finely chopped
- Sriracha or cayenne pepper
Chop all of the vegetables and place them together into a large bowl. Feel free to spritz with lemon and lime for added citrus flavour and let sit for about 5 minutes.
Next, add in a pinch of Sriracha or cayenne pepper (powder or 1 tsp. sauce), 1/2 tsp. Sea salt, and then drizzle extra virgin olive oil over the entire batch.
Carefully stir all ingredients together, more of a light toss. If desired, mash the avocado to create more of a “guacamole” consistency or keep avocado as small chunks.
Serve over 1/2 - 1 cup steamed brown rice and garnish with leftover cilantro leaves.
NOTE: Store the remainder of the salad in a closed container in the refrigerator. Once the salad ingredients marry after a few hours, the flavours will be even stronger!
